Red wine vinegar is made from any type of red wine. When fermentation is complete, the vinegar is strained and bottled. The longer the aging process, the more muted the flavors. Commonly used in Mediterranean countries in salad dressings and sauces, and in marinades for meat, chicken and vegetable dishes. Health benefits: low in calories, no fats, high in iron and vitamin C.
